For the Easy Peanut Butter Sauce

Ingredients

  • 2 tablespoons peanut oil
  • 2 cloves garlic, minced
  • 14 ounces coconut milk (1 can)
  • 1 cup creamy peanut butter
  • 1 ½ tablespoons reduced-sodium soy sauce
  • 3 tablespoons packed light brown sugar
  • 1 to taste salt
  • 1 to taste pepper

Instructions

  1. In a small pot or saucepan, heat the peanut oil over medium heat.
  2. Add the minced garlic and cook, stirring often, for 1 minute or until the garlic is fragrant and tender.
  3. Stir in the coconut milk, creamy peanut butter, soy sauce, and brown sugar.
  4. Continue to cook, stirring constantly, until the peanut butter is completely melted and the sauce is smooth and creamy.
  5. Season with salt and black pepper to taste.
