For the Beef & Bean Skillet

Stir frequently to prevent sticking; don't overcook or beans may break down

Ingredients

  • 1 Tablespoon Extra-Virgin Olive Oil
  • 1 Medium Onion, Chopped
  • 1 Pound Lean Ground Beef
  • 2 Cans (15 Ounces Each) No-Salt-Added Navy Beans, Rinsed
  • 1 Cup Water
  • ¾ Cup Ketchup
  • ¼ Cup Molasses
  • 1 Teaspoon Dijon Mustard
  • ½ Teaspoon Garlic Powder
  • ¼ Teaspoon Salt
  • ¼ Cup Chopped Fresh Chives (For Garnish)

Instructions

  1. Heat extra-virgin olive oil in a large saucepan over medium-high heat.
  2. Add chopped onion and lean ground beef. Cook, stirring and crumbling beef with a wooden spoon, until onion is softened and beef is no longer pink, about 5 minutes.
  3. Add navy beans, water, ketchup, molasses, Dijon mustard, garlic powder, and salt. Stir to combine and bring to a simmer.
  4. Reduce heat to medium and cook, stirring occasionally, until mixture is bubbling and slightly thickened, about 5 to 8 minutes.
  5. Garnish with chopped fresh chives before serving, if desired.

Notes

This hearty skillet keeps well in the ship’s stores for up to 3 days—just reheat gently below deck. A simple, satisfying meal fit for a hungry crew after a long day ashore. For extra depth, swap ketchup with tomato paste and a splash of apple cider vinegar to chart a tangier course.
